蒸汽夹层锅的操作流程

由于压缩空气是导热体，况且蒸汽本身又具有一定的压力。所以在升温过程中，不要放进压缩空气，而只需达到温度后处于保温状态即可。

在完成后，降温时，停止供应蒸汽，将水压入喷水管。由于锅内温度下降，蒸汽冷凝，而使锅内力降低采用压缩空气的压力来补偿。在加压升温过程中，应注意初排气方式，进而泄汽，使蒸汽流通。也可每隔15到20分钟放气一次，热交换。总之满足条件的规定，按一定程序进行，温度的高低，压力的大小，时间的长短和操作方法等均由罐头产品工艺作出具体规定。

1. 严格按照检查标准进行准备。  

2.检查完毕后，首先将水适量注入锅内，依次打开蒸汽放气阀、进气阀，供给蒸汽，此时应观察压力表指针是否灵活可靠，待冷气排出后，关闭放气阀。

3.夹层锅压力达到一定压力时，安全阀自动放气。  

4.将所要加工的食品放入夹层锅，待食品煮熟后，关闭进气阀停止供给蒸汽。

5.从夹层锅内取放食品时，操作人员要注意安全，防止夹层锅内水或汤料溅出。

蒸汽夹层锅特殊状况应急措施

1.如遇蒸汽夹层锅的管道、阀门突然漏汽。要立即切断汽源，通知专业维修人员处理。    

2.如遇蒸汽夹层锅的压力表压力过大，立即将减压阀关小，不允许超压使用。

3.机械传动异常，要立即切断电源、汽源 ，通知专业维修人员处理。
